i could eat this soup in a hundred degrees i love it so much. i can’t take full credit for it though.. i used martha stewart’s 15 minute white bean soup as a base and added kale and altered the amounts of things a little to balance out the added volume. it’s great for a quick, light meal and it is SO GOOD.



1T olive oil
3 scallions, thinly sliced
2 cloves garlic, minced
1t dried oregano
4c vegetable broth
1 can cannellini beans, drained and rinsed
2-3c chopped kale
1 1/2t lemon juice
1/2t salt
1/4t black pepper

saute the scallions, garlic and oregano in the oil for 2-3 minutes or until fragrant. add the broth, beans and kale and simmer for 5 minutes. break up some of the beans with a potato masher and cook another 5 minutes. squeeze in the lemon juice, season with salt and pepper and enjoy!

yield: 3 servings
