CHOCO COCO CUPCAKES

somehow i often find myself with an open can of coconut milk and a desperate need to not waste it. enter coconut cupcakes. baking really does solve every problem in my life.

COCONUT CUPCAKES

1.5c all purpose flour
2t baking powder
1/2t salt
1c sugar
1/2c margarine
2 fleggs (2T ground flax simmered in 6T water until goopy)
1/2c coconut milk
1t vanilla extract
1t coconut extract

preheat the oven to 325ºF. cream the wet ingredients together. sift the dry into a separate bowl, and then combine the two. line 12 cupcake tins with paper liners. fill them and bake for 20 minutes. cool on a wire rack.

CHOCO COCO FROSTING

1/2c margarine
3c powdered sugar
1/4c coconut milk
1/3c cocoa powder
1/2t vanilla extract

combine with an electric mixer and frost the cupcakes. dip in shredded coconut or sprinkle it on top. or leave them nekkid!
