before today, i had only had fried pickles once. i’m not sure how that happened, considering pickles and fried things are two of my favorite food groups. frying batters are rarely vegan in restaurants, so i don’t eat battered things out, but i can’t believe it’s taken me so long to make my own version of this majestic invention.
BEER BATTERED FRIED PICKLES
pickles of choice
vegetable oil for frying (as much as it takes to fill your pot with at least an inch of oil)
mix up the flour, cornstarch, paprika and beer in a bowl (this batter doesn’t need any salt because the pickles already have enough in them) and blot any brine off your pickles. i used some homemade pickle chips (from this recipe), but spears, whole gherkins or whatever else you have would work too. get your oil nice and hot over high heat–it’s ready when it crackles and pops when you splash it with water. coat your pickles in the batter and fry in the hot oil until golden brown. this should take a MAX of 15 seconds. drain any excess oil from the pickles on a paper towel.
