i don’t love green tea, but for some reason i’ve really wanted to bake with matcha green tea powder for a long time. when i took my first bite of these muffins they were surprisingly tea-y, and by the second bite i was hooked. they’re very subtle and faintly sweet with a nice leafy green color. nummmmm.



2c flour
2t matcha green tea powder*
1T baking powder
1/2t salt
2/3c sugar
1c nondairy milk
2t vanilla extract
1/2c vegetable oil

preheat to 375ºF. sift the dry ingredients together. create a well in the middle and add the wet. grease or paper-line 12 muffin tins and bake for 20 minutes. these don’t need to cool completely before glazing, and are nice and breakfast-y served warm.

*feel free to use more matcha. i went with less than i’ve seen in other recipes because i feel like any more might make the muffins taste “overbrewed.” like too much tea, in a bad way. i’m also not crazy about green tea though, so if you love it, by all means go nuts.. i just wouldn’t use more than a tablespoon per dozen muffins.



1/2c powdered sugar
2 1/2t nondairy milk
3/4t ground ginger
1/4t vanilla extract

combine all ingredients and drizzle over the muffins, hot or cold. i garnished with sliced almonds for a little crunch on top, but it’s not necessary.

YIELD: 12 muffin
