TORTONI CUPCAKES

i miss tortoni. i miss it a lot. biscuit tortoni is an italian ice cream my dad always used to get me boxes of from nasto’s old world desserts in newark, new jersey. it’s an amaretto ice cream topped with crumbled coconut macaroons and a maraschino cherry and it’s the bomb. unfortunately, it is so not vegan. this cupcake is a salute to the dessert i miss so much.

ESCAROLE & BEANS

this is one of my go-to comfort foods when i can’t decide what to eat. it’s another quick one, and it’s also pretty light. other versions of escarole and beans turn it into a soup, add pasta, boil the greens, or do other unnecessary stuff, but seriously this is really all you need to do..

GREEN ZEBRA BRUSCHETTA

i do not like raw tomatoes. i’ve just very recently, like in the past month, stopped eating around them in my food and i think it’s because of the tomatoes i grew last summer. i initially ordered the seeds for the novelty factor, but green zebras are literally amazing. they max out at around the size of a golf ball and when ripe they’re yellowish with dark green vertical stripes. they’re a little sweet and a little tart, which is probably why i like them so much. i like them even more when they’re soaked in vinegar.
